How grateful I am to be a citizen of the United States of America. Even amidst all the turmoil and economic uncertainty, the freedoms and opportunities available to us are greater here than any other place in the world. This 4th of July I hope you're able to reflect on the freedoms you and your family enjoy. HAPPY INDEPENDENCE DAY!

Celebrating Our Independence

Independence Day

Looking to John Adams' famous letter of July 3, 1776, to his wife Abigail will put the celebration into perspective.  (exact text from his letter with his original spellings)

 
"The Second Day of July 1776, will be the most memorable Epocha, in the History of America. I am apt to believe that it will be celebrated, by succeeding Generations, as the great anniversary Festival. It ought to be commemorated, as the Day of Deliverance by solemn Acts of Devotion to God Almighty. It ought to be solemnized with Pomp and Parade, with Shews, Games, Sports, Guns, Bells, Bonfires and Illuminations from one End of this Continent to the other from this Time forward forever more. You will think me transported with Enthusiasm but I am not. I am well aware of the Toil and Blood and Treasure, that it will cost Us to maintain this Declaration, and support and defend these States. Yet through all the Gloom I can see the Rays of ravishing Light and Glory. I can see that the End is more than worth all the Means. And that Posterity will tryumph in that Days Transaction, even altho We should rue it, which I trust in God We shall not." Celebrate that which deserves to be venerated, shun that which deforms our indispensable values and noble aspirations. The Fourth of July is not a government anniversary. It is a time to remember that independence is the spirit and soul of the nation. The fireworks are for, as John Adams rightly affirms, a Day of Deliverance. That liberation from captivity is what we honor and so often forget.

RED, WHITE AND BLUEBERRY TRIFLE


Ingredients

1/4 cup sugar
1/3 cup sugar
1/4 cup fresh lemon juice
1 (12 ounce) store-bought pound cake (cut into 3/4" thick slices)
1 bar (8 ounce) cream cheese (room temperature)
1 cup heavy cream
3 cups (three 1/2 pint containers) fresh blueberries, rinsed and dried
3 cups (two 6-ounce containers) fresh raspberries (fresh strawberries may be substituted)

Directions

1) Make lemon syrup: In a small saucepan, bring 1/4 cup sugar, lemon juice, and 1/4 cup water to a boil over medium heat, stirring to dissolve sugar. Let cool completely, then brush over both sides of cake slices. Quarter each slice.

2) With an electric mixer, beat cream cheese with remaining 1/3 cup sugar on high speed until  lightened. With mixer on medium speed, gradually add heavy cream in a steady stream; continue beating until mixture is light and airy, like a very soft whipped cream.

3) Arrange half the cake pieces in the bottom of a 2-quart serving dish or trifle bowl. Spoon half the cream cheese mixture over cake in dollops; spread to side of dish. Scatter half the blueberries and raspberries on top. Repeat layering with remaining cake, cream cheese mixture, and berries, piling berries in the center.

4) Cover and refrigerate until chilled, at least 1 hour and up to overnight.
